Since Mr. Martin is the President of Poultry for Tyson Foods, he knows what he is talking about. Tyson is the #1 producer of broiler chicken in the country. Consumers have picked up every bit of the decrease in sales to the food service industry. It’s not just Chicken that we stay-at-homers are buying. Beef sales are up 73.1 percent and ‘the other white meat’, Pork, has jumped up by 82.9. Today I’d like to concentrate on Chicken. Because we have lots and lots and lots of Chicken recipes. Great recipes Monte! With all the time we have on our hands these are the recipes to try! I just have question—the current “food police” urges people to not wash poultry, and it can spread bacteria round the work area. Why do some recipes still include this step? D. Greenspan’s recipe has this in the instructions.
Hello Marie, When you wrote this I thought this might be a change in information due to Covid-19. But I immediately googled and found dozens of warnings against washing chicken. And of course, wouldn’t you know it, a pushback from many home cooks. I think it’s worth adding this link so you can see what I mean.
