  • Water
  • Salt
  • FOR THE YOGURT SAUCE:
  • 1 cup thick plain yogurt (Greek-style works beautifully)
  • 1–2 cloves garlic, finely grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ½ teaspoon lemon juice (optional, but lovely)
  • FOR THE SPICED BUTTER TOPPING:
  • 2 tablespoons butter or olive oil
  • ½ teaspoon red pepper flakes or mild paprika
  • 1 teaspoon dried mint
  • Fresh parsley or extra mint for serving
Directions
  • Step 1 Cook the pasta:
  • Step 2 Bring a pot of well-salted water to a boil and cook the pasta until just al dente. Reserve a splash of the pasta water, then drain. Make the yogurt sauce: While the pasta cooks, stir together the yogurt, grated garlic, olive oil, salt, pepper, and lemon juice in a bowl. Taste until it feels perfectly balanced — creamy, tangy, and fragrant.
