SMOTHERED CHICKEN: A LITTLE SOUTHERN COMFORT FOR A CHILLY EVENING

SMOTHERED CHICKEN: A LITTLE SOUTHERN COMFORT FOR A CHILLY EVENING

With a cold spell heading our way, I wanted a chicken dinner that offered a little more comfort than the usual roast. Smothered chicken sounded just right. Chicken thighs, bacon, onions and a generous helping of gravy: this is a dish with a clear understanding of its assignment.

The recipe comes from Ivy Odom at Southern Living. I’m serving it with jasmine rice and snap peas from the farmstand. The rice will catch the gravy, while the peas should bring some sweetness, crunch and a welcome flash of green to the plate.

What Does “Smothered” Mean?

In this case, it is a very good thing to happen to a chicken. Smothering means gently cooking food in a covered pan with a flavorful sauce or gravy. It is familiar throughout Southern cooking, including Louisiana’s Cajun and Creole traditions. If the word reminds you of étouffée, there’s a reason: the French name means “smothered.”

The appeal is easy to understand. Browning builds flavor, and the gentle finish in gravy keeps everything moist while bringing the dish together.

Bacon Makes Its Case

Bacon brings another layer of smoky flavor, with sweet onion and fresh garlic adding depth. And although the gravy looks wonderfully creamy, the recipe calls for whole milk and chicken broth rather than heavy cream.

Rice for the Gravy, Snap Peas for the Crunch

Mashed potatoes would certainly be happy here, but I’m choosing jasmine rice. Its delicate fragrance should suit the smoky gravy, and every forkful offers an opportunity to gather up more sauce.

The farmstand snap peas need only a brief cook to preserve their bite. With chicken and gravy providing the comfort, something fresh and crisp alongside feels like exactly the right company.

By:

Ingredients
  • ½ cup all-purpose flour
  • 2¾ teaspoons kosher salt, divided
  • 2 teaspoons garlic powder
  • 1½ teaspoons smoked paprika
  • 1½ teaspoons onion powder
  • 1 teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper
  • 1½ pounds boneless, skinless chicken thighs, pounded to approximately ¼-inch thickness
  • 3 tablespoons canola oil
  • 3 slices bacon, chopped
  • ½ cup finely chopped sweet onion
  • 1½ tablespoons minced garlic, approximately 4 cloves
  • 1½ cups chicken broth
  • ½ cup whole milk
  • 2 scallions, thinly sliced
  • Jasmine rice and cooked snap peas, for serving
Directions
  • Step 1 Combine the flour with 2 teaspoons of the salt, the garlic powder, smoked paprika, onion powder, black pepper and cayenne in a shallow bowl. Set aside ¼ cup of this mixture for the gravy before coating the chicken.
  • Step 2 Coat the chicken thighs with the remaining seasoned flour, shaking off any excess.
  • Step 3 Heat the oil in a large nonstick skillet over medium heat. Working in two batches, brown the chicken for approximately 3 minutes on each side. Transfer to a plate.
  • Step 4 Add the chopped bacon to the skillet. Cook over medium heat, stirring occasionally, until crisp, approximately 4 to 5 minutes. Lift out with a slotted spoon and drain on paper towels, leaving the drippings in the pan.
  • Step 5 Add the onion to the skillet and cook for approximately 3 minutes, until it begins to soften. Stir in the garlic and cook for another minute.
  • Step 6 Sprinkle in the reserved ¼ cup of seasoned flour. Stir continuously for approximately 2 minutes to cook the flour.
  • Step 7 Gradually whisk in the chicken broth and milk. Increase the heat to medium-high and cook, whisking, until the gravy thickens, approximately 4 to 5 minutes. Taste and add up to the remaining ¾ teaspoon of salt as needed.
  • Step 8 Return the chicken and its collected juices to the skillet, settling the pieces into the gravy. Reduce the heat to maintain a gentle simmer and cook for approximately 5 minutes, until the chicken reaches 165°F in its thickest part. If the gravy becomes too thick, stir in a little additional broth.
  • Step 9 Scatter the cooked bacon and sliced scallions over the chicken. Serve with jasmine rice and snap peas, spooning the gravy generously over the chicken and rice.

Warm, hearty, and bursting with flavor, these comforting chicken recipes are perfect for bringing a cozy touch to your dinner table:
